It also sounds like the port connection drops and then connects again.
Just an update and a note..... Who ever wrote the Tutorial on this should have in the first line....
WARNING - YOU WILL NEED!
1 x OTG to FEMALE USB cable that comes with the Minix box - Plug this into hte Minix OTG port.
1 x USB Malee to Male Connect from PC to the FEMALE end of the OTG Cable.
I had lost hope and was sitting down and happened to look at the BOX (MINIX) thinking.... there must be something simple I am missing. .... PRESTO Saw a picture of the cable on the box and I made up a male to male USB adaptor and I am about to see if that works.
The Tutorial on how to do the Flashing is missing a CRITICAL POINT. It should include the line...
WARNING - Prior to downloading any USB Burning software or IMG packages:
Make sure you have:
1 x CORRECT OTG TO FEMALE USB ADAPTER CABLE
1 X MALE TO MALE STANDARD USB CABLE
I think that is where my problem lies.... have made my own USB TO USB cable and will post update when flashing to you tube.
Here is the update.... even with the correct cable, it did not work
Success.... I have figured it out. Install the USB Package in ADMIN RIGHTS MODE before you start.

Ive always used this cable supplied with the minix for flashing
Update.... yes it worked! all up and running! Guess I just had a day of monologue with myself on this forum and worked it all out for myself.

As @Frederick_99 says use the Micro USB to Type A cable supplied with the device!

Yep figured it out. Nothing to do with the cable at all. Everything to do with Program and administration rights of Windows I think.

probably just passed the HDMI lead through a capture device
I have a "cheap" HDMI grabber ( http://www.briteccomputers.co.uk/posts/hdmi-1080p-video-gaming-recording-hd-capture-box/)
connected direct to the HDMI output on the minix. It actually works very well !!
